Recipe time! I know, right - how have we managed to operate a parenting blog for so many years without a single recipe blog post? Well, here we are... finally!
To celebrate Quorn's wonderful new campaign, 'Helping the planet one bite at a time', here's our favourite meat-free recipe, Chilli-Quorn-Carne. Daddy created this recipe a few years ago because Tom's a veggie and Lyall loves Quorn mince. My veggie chilli is naturally low in fat, sugar and salt, it's meat-free and it uses affordable, tinned ingredients. Here we go!
Serves 4
Ingredients – in order of use
Spray light oil
Onion
1 cup vegetable stock
large bag Quorn mince
20g (half small jar) mild chilli powder
1 tin baked beans
1 tin kidney beans
1 tin chopped tomatoes
1 carton passata
1 chopped chilli
(optional) Vegan grated cheese
Rice or nachos
Method
Spray a large frying pan with light oil spray
Finely chop a large onion and fry gently
Add a cup of stock and simmer until all the water has evaporated
Mix in a bag of defrosted Quorn mince
Mix in mild chilli powder
Mix in all the tinned ingredients and passata
Add finely chopped chilli (saving a little to use later as a garnish)
Season and simmer on a low heat for at least an hour - the longer, the tastier
Serve with rice or nachos
Garnish with a sprinkle of vegan grated cheese or chopped chilli
